Blimey! Goila Butter Chicken launches in London | Condé Nast Traveller India | India


Celebrity chef Saransh Goila’s famous butter chicken is travelling across oceans. Londoners can savour his signature dish, as Goila Butter Chicken has set up a delivery kitchen at The Carousel, an experimental dining space, at Blandford Street. 

This isn’t Goila’s first venture in the city. The chef forayed into London’s culinary scene when he hosted a pop-up at The Carousel in February. Along with his signature butter chicken and dal makhani, he put together a roster of dishes, including Sindhi celeriac tuk, Gujarati fafda with artichokes salad, Assamese black sesame pork with crispy rice tostada and ginger pickle, and ghee roast prawn with mini appams or purple broccoli mini appams for vegetarians. “We were sold out in the lead up to the main event. This made us realise that there’s a whole lot of acceptance and admiration for Indian cuisine overseas,” says Goila, who soon decided to not put a time frame on his menu in the city.

His dish has been dubbed the ‘best butter chicken in the world’ by former MasterChef Australia judge George Calombaris. The secret to the recipe? It lies in the infusion of smoke and the ratio of ingredients, he says. It’s an 80:20 ratio of tomato and dairy and also steering clear of sugar and artificial colouring. But it’s not just the famed butter chicken you will find on the menu here. There’s also dal makhani, sourdough naan fired in a pizza oven and jeera rice.

Goila Butter Chicken has big plans for the future. It has entered into an equity partnership with Ghost Kitchens, a cloud kitchen incubator, to scale operations. Goila Butter Chicken currently has outlets in Mumbai and Pune, with plans to expand to Bengaluru and Vashi by the end of the year.

If you’re in London, orders can be made via Deliveroo, from 5.30pm to 10pm all days of the week or via the website. The website covers a 6-mile radius, while Deliveroo delivers within 3 miles. You can also drop by for a takeaway. The butter chicken box is priced at £19.50 (Rs1,671).
